For our aubergine sauce we chose a real treasure: the red aubergine of Rotonda, with its characteristic round shape and red colour. This delicious vegetable has been granted the PDO indication since 2010. It is currently the only aubergine variety in Italy that can boast the recognition of such an important mark.
